2cupscooked lo mein noodles or spaghetticook and chill
4ouncescooked peeled and deveined shrimp
1/2cupsliced bell peppers
1/4cupthinly sliced green onions
2cupsfresh arugula or kale
2cupssteamed spinach
2carrotssliced and steamed
2Tablespoonsrice wine vinegar
Instructions
Rinse all produce and prepare according to the list above. Get everything ready before you assemble your bowls.
Assemble one large or four small bowls in this order: noodles, veggies, shrimp, and vinegar on top.
