Double Roasted Beets
This recipe uses gold and red beets. What a color combination! Roasted beets taste so wonderful and there is very little work involved. Plus they are versatile! You can serve them hot or cold.

- 2 red beets rinsed
- 2 golden beets rinsed
- Olive oil spray
- salt and pepper to taste
Rinse the beets well to remove all dirt. Trim off the tops and roots. Cut the beets into quarters and place them in a ceramic roasting pan. Top them with olive oil cooking spray.
Season them with salt and pepper.
Bake them for 45 minutes at 425 degrees or until they are fork tender.
Serve hot or refrigerate and use on salads.
Chef's Tips: You can use regular red beets, golden beets, or a combination of both. These beets are great when they are topped with a flavored vinegar such as balsamic, raspberry, red wine vinegar, or white wine vinegar. You could garnish them with fresh figs.
