Apple-Rice Stuffing

Ingredients
  

  • 3 cups diced apples
  • 3 cups onions
  • 3 cups celery
  • 1 tablespoon butter
  • 4 cups stuffing made without fat, or 1 box of Stove Top brand stuffing
  • 3 cup cups cooked brown rice 1rice plus 2 cups water cooked for 30 minutes in the microwave
  • 1 cup low-sodium broth

Instructions
 

  • Sauté the apples, onions, and celery in the butter.
  • When they are soft (about 5 minutes), add the prepared stuffing, rice, and broth. Combine well and place in covered casserole or baking dish.
  • Bake for 45 minutes at 350°F.

Notes

Chef's Tips: If you can find a whole-grain stuffing mix, that would really be best. Substitute olive oil for half the butter.
