Cajun Shrimp Tomato Stew Over Rice

This flavorful dish makes a great weekend meal.

Ingredients
  

  • 1 teaspoon olive oil
  • 1 onion chopped
  • 4 cloves garlic peeled and chopped
  • 1-2 teaspoons Cajun seasoning
  • 1 can diced tomatoes no salt added, with liquid
  • 2 cups water
  • 1/2 pound shrimp peeled and deveined
  • 3 cups brown or white rice cooked
  • 2 cups frozen peas

Instructions
 

  • Cook the brown rice according to package directions. Try using an Instant Pot to cut the cooking time in half.
  • Heat the olive oil in a Dutch oven over medium heat. Sauté the onion and garlic for a few minutes and then add the Cajun seasoning.
  • Add the tomatoes and water. Bring to a boil then lower to a simmer. Cook for 10 minutes.
  • Add the shrimp and peas and cook until the shrimp is done about 5-8 minutes.
  • Serve the stew hot over the rice.

Notes

Chef's Tips: You can add other types of protein like chicken or white beans in place of the shrimp. The original Cajun recipes usually call for sausage but we omitted it. You can always add a small amount for flavor. If you don’t have Cajun seasoning, make your own with 1 tsp each of paprika, garlic powder, pepper, and oregano. Then add a tiny pinch of cayenne pepper.
