Chicken Broccoli Rotini
Use up your roasted chicken on this healthy favorite pasta dish made with whole-grain pasta.
Ingredients
- 1/2 pound whole-grain rotini pasta
- 1 cup chicken broth
- 2 teaspoons corn starch
- 1/4 cup plain low-fat Greek yogurt
- 1 tablespoon Parmesan cheese
- 1 cup broccoli florets steamed
- 1 cup roasted chicken breast steamed
- 1 cup arugula or beet greens
Instructions
- Cook the pasta according to the package instructions. Drain in a colander.
- Pour the chicken broth and corn starch into a saucepan. Stir and bring to a boil.
- Add the broccoli, chicken, and Parmesan cheese. Reheat until the mixture comes to a boil and remove from the stove.
- Add the yogurt. Pour all into a serving dish and garnish with the baby beet greens or arugula.
Notes
Chef's Tips: Feel free to mix it up with other proteins, beans, and veggies. The yogurt makes the pasta creamy and gives the cheese flavor a boost.
