Spicy Southern Barbecued Chicken

Ingredients
  

  • 5 Tablespoon tomato paste
  • 1 teaspoon Ketchup
  • 2 teaspoons honey
  • 1 teaspoon molasses
  • 1 teaspoon Worcestershire sauce
  • 4 teaspoon white vinegar
  • 3/4 teaspoon cayenne pepper
  • 1/8 teaspoon black pepper
  • 1/4 teaspoon onion powder
  • 2 cloves garlic minced
  • 1/8 teaspoon ginger grated
  • 1 1/2 pounds chicken skinless breasts and drumsticks
  • 1/4 cup green bell pepper diced
  • 1/4 cup zucchini diced
  • 1/2 cup freshly grated Parmesan
  • 3 Tablespoons panko or plain bread crumbs
  • olive oil
  • 1 green bell pepper
  • 1 red bell pepper
  • 1 orange bell pepper

Method
 

  1. Combine all ingredients except chicken in saucepan.
  2. Simmer for 15 minutes. Remove from heat.
  3. Place chicken on large platter and brush with half the sauce mixture.
  4. Cover with plastic wrap and marinate in refrigerator for one hour.
  5. Remove plastic wrap from chicken. Place chicken on baking sheet lined with aluminum foil, and broil for 10 minutes on each side to seal in juices.
  6. Remove from broiler and add remaining sauce to chicken. Cover with aluminum foil and bake at 350 F for 30 minutes.

Notes

This recipes calls for broiling the chicken, and then finishing it in the oven. Cook on a grill, if you prefer. In any case, be sure to cook until the internal temperature of the chicken is 165 F.
