Double Roasted Beets
This recipe uses gold and red beets. What a color combination! Roasted beets taste so wonderful and there is very little work involved. Plus they are versatile! You can serve them hot or cold.
Ingredients
- 2 red beets rinsed
- 2 golden beets rinsed
- Olive oil spray
- salt and pepper to taste
Instructions
- Rinse the beets well to remove all dirt. Trim off the tops and roots. Cut the beets into quarters and place them in a ceramic roasting pan. Top them with olive oil cooking spray.
- Season them with salt and pepper.
- Bake them for 45 minutes at 425 degrees or until they are fork tender.
- Serve hot or refrigerate and use on salads.
Notes
Chef's Tips: You can use regular red beets, golden beets, or a combination of both. These beets are great when they are topped with a flavored vinegar such as balsamic, raspberry, red wine vinegar, or white wine vinegar. You could garnish them with fresh figs.
