Chef's Salad for Meatless Monday
If you have hard-boiled eggs on hand, you can make this salad in less than 10 minutes.
Ingredients
- 1/2 cup pistachio nuts roasted
- 1 Tablespoon red onion minced
- 2 tomatoes cored and cut into wedges
- 1 cup cauliflower chopped
- Olive oil spray
- 2 Tablespoons vinegar
- 4 hard-boiled eggs sliced thin
Instructions
- Place lettuce, nuts, veggies, olive oil, and vinegar in a large bowl.
- Toss together and then top with hard-boiled egg slices.
- Serve immediately.

Pistachios can be replaced with toasted almonds or hazelnuts.
