Spicy Chick "Peas-za"
This vegetarian pizza is full of flavor and crunch and makes a fantastic lunch or dinner. It can also be served as a tapas or appetizer. Feel free to add more dishes to make a full meal.
Ingredients
Ingredients for pizza:
- 1 pound pizza dough see below or use premade
- 1/2 cup cashew cheese dip or use tomato paste or almond butter, as you wish
- 2 teaspoon olive oil
- 2 teaspoon Za’tar seasoning mix
- 1 cup crispy spicy chickpeas make your own or use prepared toasted chickpeas
- 2 tomatoes diced
- Fresh mint cut into ribbons
- 1 avocado peeled and sliced
Pizza dough:
- 1 cup water
- 1/2 teaspoon dry yeast
- 3 cups all-purpose flour
- Pinch salt
- 1/2 teaspoon sugar
- 1 teaspoon olive oil
Instructions
- Mix the pizza dough by hand or in a mixer or bread machine. Allow to rest and rise one hour.
- Pull the pizza dough out to a very thin rectangle onto a sheet tray. To do this you just gently stretch the dough.
- Partially bake (also known as "par-bake") the dough in a preheated oven at 400 degrees for 10 minutes.
- Top the par-baked dough with cashew cheese or tomato paste, olive oil, Za’tar, chickepeas, and tomatoes.
- Bake the topped pizza for 10 minutes. Remove from the oven and top with fresh mint and sliced avocados.
Notes
Chef's Tips: Cashew cheese dip is ideal but if you don’t have it you can easily use tomato paste or almond butter.
Za'atar Spice is a blend of herbs: oregano, thyme, cumin, coriander, sumac, and sesame seeds. It also has a pinch of salt.
